Delicious rich chocolate truffle mix (Ganache)

Chocolate truffle mix, called ganache in professional kitchen speak, is really easy to make. As well as for truffles, it can be used as a filling or coating for rich chocolate cakes. It is worth using a good quality chocolate for the best flavour - what percentage cocoa solids you use is down to your personal taste. Learning how to shape them with a teaspoon takes a lot of time and practice, but is really satisfying once you get the hang of it. If some of them don’t look quite so neat then I am sure you will be able to find a good home for them anyway!

Instructions

Step 1 First scald the cream in a heavy bottomed pan.

Step 2 Put the chocolate, syrup & Cognac in a bowl, pour on the cream and stir until combined.

Step 3 Finally stir in the butter until melted to give a glossy finish.

Step 4 Allow to cool before putting in the fridge overnight.

Step 5 If you want to roll them by hand then you can do this from the cold truffle mix, however, if you want to try shaping them with a teaspoon into losenge shapes like we do at the Waterside, you will need to get the temperature, and therefore the consistency, just right.

Step 6 Either way chill them again before rolling in plenty of good bitter cocoa powder.
